It's Getting Chilly...

So, Nic and I made a huge pot of spicy CHILI and two batches of cornbread for us and our friends. Everyone was left with a full belly and we had no leftovers :) It was a great way to end a day of midterms and studying, rain and cold.

Please try out our recipe... guaranteed to be delicious :)

HUGE POT OF SPICY CHILI

Ingredients:
Half of a chopped Red Onion
3 cloves of minced garlic
A few strips of bacon
3lbs of ground beef
28oz. can of crushed tomatoes
8. oz can of tomato sauce
6 tablespoons of chile powder (Piquin)
3 teaspoons of dried oregano
3 teaspoons of ground cumin
a dash of paprika
salt to taste

FRITO chips.
bunch of fresh cilantro.
sour cream

Directions:
Cook bacon in a pan. Then dice.
Saute chopped onion and garlic in bacon grease.
Brown ground beef in large pot.
Stir in bacon, onion, and garlic.
Add chile powder, oregano, cumin, and paprika.
Stir in crushed tomatoes and tomato sauce.
Bring everything to a boil and then simmer for 2 hours, stirring occasionally.

Frito-Pie Nic-Style.
The following should be layered in your bowl, top to bottom.
CRUSHED handful of frito chips in your bowl.
SCOOP of chili.
SPRINKLING of shredded cheese.
DOLLOP of sour cream.
CHOPPED cilantro.
PIECE of cornbread.
MIX EVERYTHING AND EAT IT!
